Easy Sugar-Free Coconut Pudding by Rachel Horan

This is our 3rd Chanukah Recipe Semifinalist submitted by Queens JewishMOM Rachel Horan. In addition to being a mother of 3 kids, Rachel works in Jewish outreach on a university campus.

Ingredients

1 can coconut milk
2 cups water (OR 1 cup water and 1 cup pineapple juice)
6 Tbsp corn starch
1 tsp stevia (or equivalent)

Combine stevia and cornstarch in a double boiler pan (although I don’t do that anymore. I just make it in a regular pot).
Gradually stir in coconut milk and water. Stir as mixture thickens.

Remove from heat. Serve warm or chilled. This pudding makes a great side dish for sufganiot.
