Cheese Latkes by Leah Hartman

Here is our 6th semifinalist for the Chanukah Recipe Contest by Jerusalem JewishMOM Leah Hartman. In addition to being a mom of 5 kids, Leah is the esteemed rebbetzin of Nachlaot’s “V’ani Tefila” synagogue. She hopes to one day publish a cookbook of her yummy recipes.

Cheese Latkes

These don’t get so many points on the healthy scale, but they combine both the dairy and fried traditions of Chanukah, and they are delicious!

2 cups cottage cheese
6 eggs
1/2 cup sugar
pinch of salt
1/2 teaspoon cinnamon
1/2 teaspoon vanilla
1 cup flour
grated peel of a small lemon (optional)
for topping: sour cream and applesauce

Combine all the ingredients in a medium bowl in the order given; you can mix by hand or for a smoother texture use a food processor with a metal “S” blade.

Drop by tablespoons into hot oil and fry until golden brown. Drain on paper towels. Top with sour cream and/or applesauce.
